In the Gateverse, I used to totally ignore the Jack/Sam canon, but lately I've been less eager to do that and working harder on at least to some extent working those feelings into my fic. It's easier for me to ignore Jack's feelings for Sam than Sam's for Jack.
I always try to find an appropriate jumping off point in canon, to start with canon characterization then change one specific thing and work outward from there, sometimes ending up a long way from canon, but always starting there.
I almost always twist canon -- although I suppose I also have a good number of futurefics, backstory fics, and missing scenes -- but rarely ignore it. I think my writing is better when I don't just assume, for instance, an extra-canonical 'ship. I do sometimes (when writing Shep/Weir for
